How can something this delicious, so delightful not only on the taste buds but also in the stomach because it settles nicely and doesn’t weigh you down even though it’s filling. How can something this good also be gluten free, dairy free and no sugar?! We get it, it almost sounds TOO GOOD but guess what, it is true! They are TOO GOOD all around. And after you try your hands on them, tell us if the name isn’t perfect!

 TOO GOOD BLUEBERRY PANCAKES -                      THE NYORISH WAY

In addition to your Too Good Gluten free pancake mix,

You’ll need:

•3 cups coconut milk  
•1/2 cup avocado or coconut oil                          
 •~4 medium sized ripe bananas mashed                        •4 eggs (may sub flax eggs or other egg replacement to make vegan)
•4 tsps vanilla extract                
•~1.5 cups organic blueberries (frozen works!)

Optional: coconut flakes 

Preheat your pancake griddle then…

1. In a large mixing bowl combine all wet ingredients -milk, eggs, oil, vanilla extract- and whisk very well. This is an important step in order to achieve our signature fluffy and filling but light pancakes. So make sure to whisk very well to aerate the wet mixture until you achieve an almost foamy consistency. 

2. Simply add in your TOO GOOD pancake mix to the wet ingredients, mix together just until combined.
 DO NOT OVERMIX. Add mashed bananas and blueberries (and coconut flakes) to the batter and fold in it till well combined. Again, DO NOT OVERMIX! That’s it! Follow instructions for your pancake griddle  and in no time you’ll be enjoying your deliciously NYORISHING pancakes!                       

NOTES:

-Following the recipe as is, will yield delicious Gluten free, nondairy, sugar-free pancakes. However, feel free to substitute the milk with your preferred milk whether nondairy or raw cow’s milk or goat’s milk. You can also switch out blueberries for other berries or nondairy chocolate chips or other healthy toppings of your choice.  Feel free to experiment! 

-These pancakes freeze well so whatever your family doesn’t devour on the spot, just pop into the freezer in freezer-safe bags and it reheats perfectly as well. 

- If you don’t want to use the entire mix at once, just simply adjust the wet ingredients accordingly. E.g: If you use half the bag of mix, cut everything above in half as well.
